Cupcake with Green Frosting

Cupcake with Green Frosting

1 cup butter, softened
2 cups sugar
4 large eggs
1 tsp. vanilla extract
1 3/4 cups cake flour
1 1/4 cups all-purpose flour
1 T. baking powder
1/2 tsp. salt
1 cup milk
Butter cream Frosting

  1. Preheat oven to 350 degrees F. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating until blended after each addition. Stir in vanilla.
  2. Combine flours, baking powder, and salt. Gradually add to butter mixture alternately with milk, beating until blended.
  3. Place 24 paper baking cups in 2 ( 12-cup) muffin pans. Spoon batter into paper cups in pans, filling two-thirds full.
  4. Bake at 350 degrees for 20 to 25 minutes or until a wooden tooth pick inserted in center comes out clean. Remove cupcakes from pans to wire racks, and let cool completely about (20 minutes). Spread cupcakes with frosting. Decorate as desired.


Butter cream Frosting
Beat 1 cup softened butter and 2 tsp. vanilla extract at medium speed with an electric mixer until creamy. Gradually add 6 cups powdered sugar alternately with 1/2 cup milk, beating at low speed until blended and smooth after each addition.  Add food coloring if desire.Makes 4 cups.
Note: You may not use all of the milk. Use just enough to get  the consistency you want. For white frosting use clear vanilla extract

Banana Cupcake recipe

Banana cake or cupcakes:

Recipe of Banana Cupcake
125g (4oz) butter
175g (6oz) sugar
2 eggs
2 large mashed ripe bananas
1 tsp Baking soda
2 Tbsp boiling milk
1 tsp baking power
225g (8oz) flour
Cream butter & sugar till light and fluffy.
Add eggs one at a time.
Mix in mashed bananas.
Add baking soda that has been dissolved in hot milk.
Lastly mix in sifted flour & baking powder. Dont overbeat the batter.
For a cake bake it in a 20cm ring pan on 170 C (325 F) for about 45 mins.
This mixture will produce around 18 standard size cupcakes and they are baked at 170 C (325 F) for approx 18-25 mins. You want them to be light golden brown and a toothpick comes out clean.

 La diferenci entre usar moldes para muffings vs cupcakes es que el muffing es mas grande. ver fig.




Estoy listo con la parte de decoración de Cupcakes 2  y esto es todo acerca de mis recetas favoritas de la cupcakes.

Se trata de la cúpula.

Mi mejor manera de conseguir una cúpula de pastelitos no es la crema de mantequilla y el azúcar, sino para batir los huevos y el azúcar y derritiendo la mantequilla con la leche, eso es todo. Por supuesto, este método va a cambiar la textura del cupcake de un cupcake  más amplio y luminoso, pero si el cupcake va a ser sumergido en la pasta de azúcar este método es perfecto.

Receta:


Cúpula pastelitos de vainilla:

1. Caliente la leche con la mantequilla para que se derrita la mantequilla y deje enfriar por si es muy caliente.

2. Batir los huevos, el azúcar y la vainilla hasta que quede espesa y cremosa con la batidora de mano eléctrica.
Tenga cuidado de no batir demasiado tiempo ya que esto puede dar muchas burbujas de aire.

3. Mezcla en la mezcla de leche y mantequilla.

4. Agregue los ingredientes secos y mezcle todo hasta que esté suave y sin grumos de harina.

Esta mezcla es más liquide, por lo que la transferencia de la mezcla en una jarra y se vierte en los casos de papel. Usted puede usar una cuchara para recoger el goteo bateador puede llegar. Normalmente se llenan los cascos a  3 / 4 partes con la mezcla. Si sólo llenar 3 / 4 con esta receta de vainilla (de huevo y azúcar), todavía se hacen una cúpula muy bonita. Pero aquí he añadido la masa un poco más de 3.2 cucharadita extra. Esto me da, una cúpula más alta y el aumento de la magdalena lo más cerca que pueda a la parte superior de los casos de papel. Esto también hace que sea más fácil conseguir una tapa bien con la pasta de azúcar derramado.
Coloque los cupcakes  (muffin) pan en el centro del horno y hornee hasta que un palillo salga limpio.

Suerte con el Horno. Recuerde precalentalo antes de meter el sarten con los cupcakes.

Durante la cocción se puede producir una "volcanes" en el medio, pero que fácil se puede fijar el momento en que los saca del horno, simplemente suavizar los bizcochos con el dorso de una cuchara. Esto también puede ocurrir con el método "original".

Sólo para demostrar lo bien que la cúpula que he cortado dos de ellos. El de la izquierda es el "huevo y el azúcar" y la de la derecha es la "mantequilla y el azúcar". Al ver que no puede ser la gran diferencia en el sabor, pero no es como los más adecuados son más húmedos. Recuerde que estos pastelitos son los mejores en el día en que se cuecen al horno. Puede tenerlos almacenados durante 1 día y se les dará un poco pegajoso en la parte superior, pero bien en el gusto. Si usted necesita más tiempo para que los guarde yo los cepillo ligeramente con un jarabe de azúcar.

Healthy Blueberry Orange Muffins

makes 18-24 muffins
Ingredients:
1½ cups all-purpose flour
1½ cups whole wheat flour
¼ cup ground flaxseed
1 cup packed brown sugar
1½ tablespoon baking powder
1½ teaspoon salt
¼ cup plus 2 TBSP apple sauce
3 eggs
2 tablespoons orange zest
¾ cup milk (I used soy)
¾ cup orange juice
1 pint fresh blueberries
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly spray the muffin tin (or line with muffin liners).
In a large bowl combine all the ingredients. Beat at low speed just until moistened. Then beat at medium speed for 2 minutes. Fold in the blueberries. Pour batter into muffin tins about ¾ full. I used a cookie scoop for this. It’s about a ¼ cup full.
Bake at 350 degrees F (175 degrees C) for 15-18 minutes or until a toothpick poked into the center comes out clean. Cool in pan for 10 minutes then invert onto a wire rack to cool completely before serving.

Pumpkin Cupcakes with Cream Cheese Frosting

ingredients:2 cups cake flour, sifted
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp kosher salt
1 tsp ground cinnamon
1/2 TBSP ground ginger
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1/2 cup unsalted butter, softened
1 1/4 cups packed light brown sugar
2 large eggs
1/2 cup buttermik
3/4 cup pumpkin puree


for the frosting:1/4 cup butter
4 oz cream cheese
1/2 tsp vanilla extract
1 cup confectioner’s sugar


directions:Preheat oven to 350° F. Line 2 muffin trays with 18 paper liners. In a medium bowl sift together dry ingredients: flour, baking soda, baking powder, salt and spices. Set aside.

In an electric mixer on medium-high speed, cream butter and brown sugar until pale and fluffy. Beat in eggs one at a time until each one is fully incorporated. Reduce speed to low and add the flour mixture in three batches, alternating with the buttermilk. Beat until just combined, then add pumpkin and beat until just combined.

Using a 1/4 cup ice cream scoop, scoop and fill the lined cups. Bake in preheated oven for 15-18 minutes, rotating halfway through. Cupcakes are done when a toothpick inserted in the center comes out with little or no crumbs. Allow to cool in the pan on wire racks for 10 minutes before transferring to wire racks to cool completely.


for the frosting:Beat butter and cream cheese until light and fluffy. Add in vanilla, beat until combined. Gradually add powdered sugar and beat for 5 minutes or until fluffy.

Attach your favorite tip into a piping bag, or cut the corner of a ziploc bag and pipe onto cupcakes from the outside in. Alternatively, you can scoop and spread the frosting with an offset spatula.

Makes 18 cupcakes.
